The Dasylirion plant is a medium-sized shrub with numerous leaves and woody stems that grows in the desert thanks to their high drought resistance. Native to the Coyame region of Chihuahua, this area is very dry and completely desert-like with extreme temperature fluctuations. The plants can take up to 20 years to mature and be ready for use in making the Sotol spirit. The sotol plant is wild and protected, so permits are required to harvest it. Harvesting is only possible during the cold season.
